Inspiration needed please give me some ideas

I have been lurking around for a while making the odd comment but generally not joining in, so thought I would ask for help here.
I have a small sandwich shop/cafe that I have now owned for almost a year business is slowly getting to a point where I'm actually making money and managing to get the whole work life balance thing sussed.
Now to the point of my post. Grin
I initially thought of the menu in a bit of a rush and it needs a revamp! Can anyone tell me any brilliant sandwich/panini fillings?
Iv tried google and Pinterest but everything seems to be full of avocado at the min Confused

My favourite sandwich in the whole world is a ciabatta with humus and cold garlic and herb mushrooms ( eg fried in herby garlic butter but cold) with a squeeze of lemon juice - absolutely amazing!

I am also partial to rocket, cold poached salmon and a little yoghurt and mint dressing.

My husband loves tuna mixed with ketchup and mustard and diced onion - weird but wonderful

Tuna and ketchup is a new one, the weirdest sandwich we make is for a lady who regularly orders bacon and beetroot! Apparently it tastes amazing.

Maybe try some plainer fillings. I can’t stand mayo/coleslaw etc and find it really hard to get a sandwich.

Sandiwch shop near where I used to work did a Brie, grated carrot and caramelised ginger in some kind of sub roll. It was the holy grail of sandwiches. You had to get there early or they'd all be gone.

Might have to go round that way this week...

Just make sure there's options for dietary needs too! I'm lactose intolerant and ALWAYS struggle to find something suitable.
As for the best sandwhich/panini, sweet chilli chicken with some small pieces or thin slices of chorizo, with crunchy lettuce, peppers, lightly salted, peppered and an option for added bacon is golden. 😊
Also, red cabbage coleslaw is the best!

I add sprouted seeds to sandwiches, wraps etc. Gives a lovely crunch and taste and it very trendy / healthy at the moment.
Dirty cheap to buy and sprout your own, enjoy seeing them grow at a local organic cafe I use

Pesto, tiny bit of mayo, Parma ham (or similar), hard Italian cheese, and basil.

Our local sandwich shop does baguettes with chicken in a curry mayo which my husband would have every day if he could!

Ciabatta with pesto mayo, thin slices of chorizo, thicker slices of bacon and tomato. OMG so good!!

Do you offer a pre-order service? Our local highly successful sandwich shop does, offices call ahead with lots of orders, someone makes them up for a pre-agreed time and then one person from the office comes and collects and pays for them.

Our local butty shop do offer some brie caramelised onion panini type things but they just have a good selection of bread and a good selection of meats and salads, it's absolutely crammed full of customers every day, the food is all fresh and really tasty. They will have specials which might be cajun chicken or something. Do you need specific fillings? I always think people know what they like anyway, I love a good butty!

What about a warm beef and caramelised onion in ciabatta? The onion would need to be a little saucy but have some thin crispy fried onion in the sandwich too. The beef could be cooked medium rare and warmed up in the microwave before the onions added no butter as the ciabatta would have the sauced onions.

We currently do have a lunch delivery service which works well our most popular panini seems to be a bbq chicken bacon and cheese one. Thank you for all of your suggestions I'm going to have an experiment day.
