What’s for dinner tonight?

I really need some inspiration! Family of 6, happy to cook from scratch or slow cook, something that needs to stay in the oven while I do a 5pm school trip pick up.

We’ve already had jacket potatoes with chicken in sauce, a quick pizza / salad meal and fish this week.

What are you having?

I know this is a bit boring and my post isn’t going to win the internet today Grin

Slow cooked garlic and chilli Bolognese.

Just need to boil pasta later and all sorted.

Probably a bit late now but beef bourginion with garlic bread (I know but the four year old insisted!)
Home made warm banana cake with melted galaxy chocolate on it.
Lots of red wine it's been a sod of a week.

DD - chicken fried rice
DH - curry and naan bread
Me - corned beef hash

We are getting rid of all the stuff that's in the freezer. I do a lot of batch cooking and freeze it all as individual meals so we can all have something different if we feel it.

I currently can't have curry because it will stain my brace but I really want it. We have a shelf in the freezer dedicated to curry and I can't wait to get this brace off to have some!

Was supposed to be spicy prawn linguine but my sister who is coming over said she doesn't fancy it- gee thanks. It will probably end up being a takeaway of some sort. Would prefer a homecooked meal though (not like me at all)!

Well, everyone’s dinner was much nicer than mine.

International Women’s day means very little in my house, it’s just another ordinary day doing what I always do.

I know I’m late on this but my favourite dinner for ease and convenience is some variation on a chicken traybake.

Parboil big chunks of potato (I leave the skins on). Let them cool slightly.

Chicken drumsticks and thighs
Potatoes
Onions chopped into medium size wedges
Tomatoes, halved
Peppers chopped into biggish pieces
Courgette cut into fairly thick rounds
A wedge or two of lemon
Several smashed cloves of garlic
Thyme and/or rosemary
Plenty of olive oil, salt and pepper

Roast at 180 (fan oven) for 40-45 min.

So delicious and you can change up the veg selection to suit you.

We're having steak with onions and mushrooms in thick gravy, with creamy buttery mash, carrots and green beans. I might also do some Yorkshire puds.
