1 Packet of rich tea biscuits...

I have this wonderful recipe book: it's an old WI one and the recipes have been sent in by WI members.

But they're so funny! There's 1 thing that I make out of it-chocolate mint cakes. It's a biscuit base with minty butter icing and a chocolate top.

But the recipe says:
1 packet of rich tea biscuits....

So, how many biscuits or grams of biscuits do I need? The base takes 4oz of margarine. Obviously I am using butter. Smile

Next time I'm going to write notes on the recipe about quantities!

I would melt the butter and add biscuits until you get the right consistency.

Can you Google how many grams in a few packets and go for there abouts? Then add a bit more if needed.

I should have added I was primed and good to go. I have discovered that my 300g packet of rich teas required double the butter. So I've made 2. Good job it's for a birthday!

You know what-it's like a mint aero on a cheesecake base.

I remember years ago someone asking here for help finding a recipe that her nan used to make and it was this-she described the 'cake' and the book it came from and weirdly I'd just found the book so I posted the recipe for her. Smile
