Can someone give me a foolproof method of making crispy sweet potato fries

Mine always end up soggy not crisp. Google has lots of recipes but they're all very american. Thank you!

Hmmmm restaurant local to me deep fries them they swear it’s the only way to crisp them up

They never are crispy unless dropped into deep fat.

Ah no, I can't find it. It was from the Smitten Kitchen and it was the only time I've ever managed to get them crispy. But I must have got it from the book I borrowed from the library, not the website.

I think the sweet potatoes were cut into chips, par boiled for a few minutes then left to dry on a tea towel before being sprinkled with cornflour then roasted in the oven. But that is from memory and might be wrong...

realisticly deep fat frying is the only way to get them proper crispy on the outside and fluffy inside even an air fryer dosent seem to get them just right like it does ordinary potatoes
