Overwhelmed by fatigue today, what easy nutritious meal can I make?

Today has been really hard.

Brain is blank and can't figure out something to eat for dinner, I need something that's not just toast. What's the easiest way of getting loads of veg in without needing to chop and prepare?

Brain is so blank i can't pair up food items into proper meals. All I can think is a baked potato but what can I add to boost nutrition?

Buy a ready prepared stir fry meal.
5 mins to cook and no prep.

Or just give in and have toast with a bottle of wine. That's what I'd do tbh....

Stuffed jacket potato is very comforting, cook a leek, scoop out the cooked potato, mash together some cheese/Philadelphia, add the leek and back in the oven. Could have baked beans on the side for an easy extra bit of veg. Little effort, but will make you feel that you have looked after yourself a bit.

I was going to suggest omelette. If I'm in a hurry, I'll slice up a leek, add a bit of oil and/or butter whack it in the microwave for a few minutes to soften, then have that folded into the omelette.
You could also do that with the jacket potato, cook the leeks in the microwave, then mash it into the potato, sprinkle cheese on and under the grill for a few mins (or back in the oven).
If you want more veg...frozen peas with the omelette or baked beans with the potato.

Or buy some frozen prepped veg, supermarkets do a sofrito mix, and frozen prepped butternut squash. Chuck it all in a saucepan with some stock, can add ginger and other flavourings , whizz it up - easy veg soup.

My go to healthy easy meal is

Salmon fillet wrapped in foil with soy sauce, chilli flakes and frozen ginger sprinkled over then bung in oven. Stir fry pack of veg and ready cooked noodles with soy sauce or sweet chilli or whatever you have in fridge. It's delicious.

Done in 20 mins

My super easy can't be arsed with anything meal is breaded fish and baked beans. Also ready in about 20 mins and feels very comforting.
