What to do with 4 packs of tomatoes please?

Dh has some left over from a scouts cooking activity and is like to put it into good use before they go mouldy!

Idea I've thought of:
Salsa
Minestrone soup
Pasta sauce instead of tinned tomatoes

Doesn't seem very exciting so far so I would appreciate ideas. Thank you.

Get some chillis.
Put in food processor with tomatoes, chillis, one onion, some vinegar and a dash of salt and a little sugar.
Cook on the hob for a bit.
Chilli sauce!
I have made some and threaten to feed it to my children if they misbehave.

I do a seafood linguine with fresh tomatoes, a splash of white wine, bit of garlic, plenty of olive oil, salt and a touch of sugar and one of those seafood packs from the supermarket. It's very nice and will use up at least a pack of tomatoes.

I roast with pesto. Can then be eaten chunky with some nice bread, or either pasta, or blitzed to smooth sauce for pasta, pizz as topping, etc

Scoop out the middle and dry them in the oven (low and slow) with some garlic and herbs.

I love the meals that come about from "leftovers from Scouts activities"!!! Grin Usually an utterly random assortment here that cannot really be made into anything...

If he also brought home leftover bread, make stuffed tomatoes (fry a finely diced onion, then add some garlic, whizz the tomato middles (scooped out) and some cooked ham/bacon and add that, some breadcrumbs, a handful of decent strong cheddar (grated) and some herbs (dried oregano and thyme are good for this). Put the stuffing into the shells of the tomatoes, and bake for 25-35 minutes until soft and tasty.

As an alternative for the Scouts, suggest to DH next time that he makes a pizza base dough with them (a basic flour, olive oil and water dough should be fine), make it into a pizza base shape to fit in the pan, fries that on the pan on one side, turn it over and top with tomatoes, cheese and (random assorted toppings only Scouts would choose), and allow to fry on the other side. Heat from the pan should melt the cheese. It might be more acceptable than bruschetta.

Roasted tomato soup, with herbs and buckwheat. Like the waitrose soup. Bloody delicious.

Tomatoes cooked in butter on toast.

Large slab/knob of Lurpak salted, add chunks of tomato, simmer gently until soft, add lashings of salt and pepper, a little grated cheddar if you like, served on a slice of toasted bread. Delicious.
