I need THE best carrot cake recipe ever in the whole world!

SIL is forever slagging off my cooking/baking. Now I'm okaaay but not amazing and I want to put her gas at a peep with an amazing carrot cake.

Disclaimer - I love my SIL, none of what she says is in malice, it's a standing joke but it's her birthday coming up and carrot cake is her fave. She'd be absolutely shocked if I nailed it! Grin

I really like Mary Berry's, but the bananas have to be brown and mushy.

I'm not sure if the Swiss invented carrot cake or just do it very well, but this one has never let me down.

The Avoca one. It is the best! (although I use a different icing)

1.5 cup plain flour
1 cup of brown sugar
1/2 teaspoon salt
1 teaspoon of: bicarb of soda, baking powder, cinnamon and ground mixed spice

4 eggs
200 ml vegetable oil( not olive)

1.5 cup finely grated carrots
1 cup chopped pecans or walnuts

Handful of dessicated coconut(optional)

Sift all dry ingredients
blend oil and eggs until well combined

Add egg mixture to dry ingredients, combine until there’s no lumps.

Add carrots, nuts and coconut, combine together.

Bake at 170/175 degrees fan oven for about an hour, then prick with wooden skewer,if it comes out dry the cake is ready.

Icing:

200 g unsalted butter
250 g soft creamy cheese( philadelphia type)
1/2 cup icing sugar
teaspoon of orange essence

Sift the icing sugar, cream with butter, add cheese and irange essence.
