Meal planning boredom, any ideas?

I’m feeling very uninspired this week and although have some nice ingredients in I can’t face making another chilli/cottage pie/bolognese/ragu. I have a challenge to not go to the shop to add anything to what I’ve alreadt got, which is plenty. Any creative sorts out there to turn meh into mmm? I’ve got -

Bacon, mince, prawns, onions, garlic,spinach, potatoes, pearl barley, pancetta, flour, rice, lasagne sheets, avocado, tomatoes, roast peppers, mushrooms antipasti, Parma ham, salami, mash, chips, arborio rice, sushi rice, Thai rice,wasabi paste, nori, olives, capers, anchovies, tuna, chillies, rocket, cannelini beans, kidney beans, chopped tomatoes, peas, tuna, cucumber, sliced bread, creme fraiche, goats cheese, butter, cheddar, mozarella, Parmesan, apples, bananas
Various stocks, herbs, spices, oils, vinegars, nuts, sauces, fresh basil & rosemary

A few easy tapas dishes? Patatas bravas (roast potatoes cut up smallish and then add a spicy tomato sauce, I often throw in a can of cannelini beans too) with prawns fried in garlic and serve alongside any salad or veggies, or with the mushroom antipasti and Parma ham you have. Any slightly random meal gets called tapas here.

Have a look at some Lebanese recipes, make a flatbread, top with spicy mince with salad and a yogurt sauce.
A prawn curry/soup.
Make pizza
A take on jambalaya or biryani Naydia Hussain does a prawn one.

Do you have dried pasta other than Lasagne? I'd make a Macaroni Cheese but with the bacon, onion and spinach included for extra flavour/variety

Peppers stuffed with vegetables and pearl barley (used instead of rice) and cheese is nice.

I would pick a county and find a dish that uses the ingredients from that country

Home made tuna fishcakes, add chilli and finely chopped capers to the mash, a mash tuna with black pepper and balsamic vinegar, stir into mash, shape, coat in bread crumbs and bake.

Potato Gratin with mushroom and spinach. You can use the cream fraiche with water / milk and season with garlic and nutmeg. Obviously plenty of cheese on top! 😋

Thank you so much all of you! I made a prawn & spinach curry this evening, tomorrow will be mac & cheese with bacon & greens, Thursday will try flatbread with spicy mince, tabbouleh & salad, Friday tuna fish cakes! I’m also going to peruse bbc good food to look at different countries as suggested. Thanks!

Roasted red pepper sauce, made with blitzing up the roasted red peppers, cream cheese or similar, chicken stock and garlic, basil, salt and pepper. Whizz them up in a blender (I use my smoothie maker, ha). Then use the sauce for soup or over chicken, or pasta. We had it tonight over chicken breast and a side of broccoli, it was good.
