Healthy-ish/low sugar baking recipes for kids

I love baking with my preschoolers but I’m loathed to make a whole cake/batch of biscuits just full of sugar! I don’t mind this occasionally but we like to bake a lot so I’d be grateful if anyone has any successful healthier recipes. TIA!

Breakfast cookies are good, I will try and Google the recipe but it should be easy to find. I made them with banana, cinnamon, raisins, applesauce, 1 teaspoon I think a vanilla extract and I think that was it. They were very easy to make. You can replace the reasons with chocolate chips.

Do your children like desserts with fruit? Have you tried something like sticky rice and mango? It's a really nice Thai dessert. I think you need something special though for the sticky rice.

Not quite baking though, but still very tasty and something new to try.

Fruity tea bread - lots of kneading, stretchy gluten, rising, and very little sugar. Can make them into individual rolls or a larger loaf.
Plain scones.
No bake cheesecake - soft set jelly (no sugar) made with half the usual water, electric-whisked with philly cheese on a digestive crumb base.
Shame it's always cakes these days, I made some cracking stuff in DS (domestic science for all you young 'uns) at school.
