Be honest ... are there any genuinely delicious things I can make with red lentils?

I've got a glut of them and I don't really know why, or what to make.

I use puy or green lentils in soups and salads. Red lentils just make gritty mush don't they?

Whenever I try to put lentils into Bolognese or whatever, the stick t o the bottom of the pot and burn. It's happened loads of times.

How to avoid?

I do but I want to walk away and let it summer while I get on with stuff. It's too much bother to be Standing and stirring for half an hour.

3 carrots, 2 onions, garlic and ginger (I use paste), splash of water, lid on and cook on low for 10 mins. Add 1 tsp ground coriander and 2 of turmeric, mix, add 300gm lentils and a litre of stock, cook gently for 20 mins. Add half a tin of coconut milk and blend. Nice with rice or naan/pitta. You can add chopped fresh coriander at the end Smile

I make dahl with butternut squash and it is fab. Sometimes I put coconut milk in, and sometimes almond butter or peanut butter instead

Chicken breast cubed, sweet potatoes cubed, chicken stock, coconut milk, curry paste (any) and dried lentils. Leave to simmer until potato cooked through and sauce thickening. Can't remember any of the quantities off the top of my head, I just tend to guess. Goes well with rice or chapattis.

7days - might be a bit more faff, but you could try chucking the lentils in to boil by themselves for 5 mins before adding to other stuff? If they're already part cooked then they don't sink so readily and it does speed things up a bit.

Red lentils are lovely with cheddar cheese. I used to make a dish of cooked red lentils with stock, and grated cheddar, baked in a round tin like a thin traybake. It was lush.

Not sure if this works with red lentils but I've done this with yellow lentils: soak them for an hour, drain, wipe off any excess moisture and then scatter evenly across a baking tray/sheet, drizzle with oil over the top, add spices if you like and then bake in oven at 180C ish fan oven setting, until they start becoming crispy/golden brown but before they get burnt (time varies but it's usually very quick)

You end up with crunchy lentils as a snack which taste great.

One of our favourite soups.

Very gently sweat two medium sliced onions, with 3 carrots 4 stems of celery, 3 Courgettes all diced finely.

Add two tomatoes, two or three handfuls of red Lentils, the rind os a piece of Parmesan if you have it.

Add stock or water to a bit more than cover the veg. Boil, lower temperature and simmer for 30 minutes. Add salt. Serve.
