I’m thinking:
Summer at a water park resort the kids would love for 2 weeks
A week’s winter sun somewhere with a nice peaceful beach.
A spa weekend with dp somewhere scenic in the U.K.
A long weekend with the kids at a theme park.
A cottage/caravan somewhere in the U.K. I’ve never been with extended family (babysitters!) for a week in early or late summer.
A city break or two with dp.
Christmas at a lodge in the Cairngorms
Skiing in February (N America if no budget)
I can dream...
