If I hard boil an egg tonight and then keep it in the fridge is it safe to eat for lunch tomorrow even if the use by date is today??

It's fine.

It would be fine even for a week or so.

Bakeries/sandwich shops don't boil up eggs every day.

Yes. The date on eggs is if you keep them at room temperature anyway. If you normally keep them in the fridge you can keep them for longer. To check the freshness of an egg, put it in a bowl of water. If it sinks flat, it's fresh. It will stand on one end of it's older but okay to eat. If it floats it's past its best.

Yes, it's fine. I find that eggs will usually be ok a few days after the use by date but they won't be as fresh.
