I have breaded haddock and a bag of baby spinach, inspire me

I want to have something very tasty for dinner tonight but am also using up what I have at home. I have frozen breaded haddock, a bag of baby spinach, baby potatoes, baking potatoes, petit pois, sweet potato fries (oven)

I think I would like something more than just boiled potatoes, fish and spinach side by side on the plate...

What would you do with this lot?

Opt 1. Add tomatoes, rocket, cucumber yo spinach. Squeeze of lemon too. Make hassleback boiled potatoes. As in roast them but stuff with garlic and parsley.
Opt 2. Cut up breaded haddock and with spinach and a bit of mayo but over a baked potato.
Opt 3. Dauphinouis potatoes and haddock.
Opt4. Make a cheese onion and spinach bake and serve with haddock.

I'd roast the baby potatoes in lemon juice and olive oil, chuck in tomatoes (if you have), garlic, salt and pepper. Throw the spinach in for the last few mins to wilt and squeeze more lemon over the top.

Bake the haddock as per cooking instructions!

Off the wall idea, based on something I had in a restaurant once and now I eat breaded or battered fish like this a lot.

Serve the fish with pilau rice and curry sauce - instant Chinese/chip shop style. Cook the spinach and mix it in with the rice.

Have baked potatoes with cheese/tuna/cottage cheese/whatever you normally like another day.

I think I am going to go for baking the fish and making spinach florentine - sounds absolutely delicious! Perhaps a couple of steamed baby potatoes on the side.

There will still be fish left so will try out some of the other lovely recipes next week :-)
