Can I have your best salad recipes please?

Having friends round for dinner tonight and in just going to make a couple or pizzas but would like to serve up a few tasty salads to give with them. I'm feeling a bit fed up with my usual salad go to so can someone please inspire with a simple but delicious salad recipe?

Is it a sit-down meal or a buffet? Not sure I’d want pizza and salad in this weather.

I usually make this alongside salmoriglio lamb but could work with pizza I think. - borlotti bean and olive salad with roasted balsamic onions (roast onions which have been seasoned with salt, pepper, sugar, lemon juice, olive oil and balsamic - for 20 mins, cook green beans for 2 mins, refresh in cold water, plate up with borlotti, tomato, celery, celery leaves, beens, olives, roasted onions with juice, basil leaves and drizzle with bit more evo and balsamic)

On the onion vibe - Rachel Roddy's agrodolce onions are awesome - but need time which you may not have.

You could switch out the pizza and replace with lahmacun and then serve with fattoush?

maybe an acqua e sale very simple salad but you'd need decent tomatoes

I had to look up lahmacun and it seems it’s just a Turkish pizza with a minced beef topping instead of the kind of pizza toppings most people tend to eat here.

I guess if you’re doing a Turkish meal it would be great but otherwise I’m not sure why you’d want to swap one pizza for another?

Rocket with slices of parsmesan, balsamic vinegar and a bit of olive oil.
Very quick and easy to make and continues the italien theme.

Caprese : tomatoes and mozarella with basil and olive oil

I buy a few corn of the cobs and de-cob them, put the corn on a baking tray and bake for 15ish min til some are charring. Then mix with really small chopped red peppers, cucumber, spring onion and toss with a simple garlic-white wi e vinegar-olive oil dressing.

YUM

finely shredded red cabbage and red onion (mandolin if you have one), julienned carrots, loads of coriander. Red wine vinegar, s&p for fancyish coleslaw

I love the Italian cold pasta salad. Tri-colored pasta or Bowtie Pasta, balsamic or Italian dressing, Parmesan cheese and assorted veggies such as sweet peppers, red onions, olive, carrots, tomatoes. You can dress it up however you like with pepperoni or other chunks of Mozzarella cheese. It's quick and easy and goes great with pizza.

I love some kind of coleslaw with pizza so that would be one. Yoghurt in place of some or all of the mayonnaise makes it lighter.

Then a green salad:

The maybe something tomato based, tomato and red onion maybe with olive oil, balsamic, basil and lots of salt and black pepper.

To me a simple salad would be a mixed salad leaf bag, with tomato, large chopped/sliced one or cherry left whole, and cucumber and spring onions. All mixed up in a large salad bowl. Very English, so not perfect with pizza? But simple, with a nice dressing one can add themselves. Especially as you said you're making your own pizza? I used to make my own. If you've got time to reply OP, just out of interest, what pizza are you making? Not the recipe.

i usually do a hot new potato salad with pizza, chop new potatoes up small with the skins on cook them mix with mayo and chopped spring onions and any leftovers can be eaten cold the next day

Halve a load of cherry tomatoes & drizzle with oil, season & slow roast in oven for an hour or 2. Eat alone or mix with couscous, onion, rocket, whatever.

Steamed rice with toasted flakes almonds & chopped apricots & cranberries or pomegranate seeds. Yum!

Thanks everyone, I knew i could rely on you! As it turned out my train was delayed so I was in a big rush so salad was mixed salad leaves, tomato, cucumber, toasted pine nuts, olives and feta with some balsamic. It was very quick and tasty. Looking forward to trying out all the recipes above!
