Pizza sauce help please

I’m making some pizzas tonight...I have dough and toppings, but I’m not sure about the sauce. I have passata with basil, oregano and garlic. Should I do something else with it before using?

Tomato purée to thicken and make it more tomato flavoured

I fry up onions, garlic, tomato purée, oregano, Paprika with the passata. I reduce it quite a bit so it’s a nice thick topping.

I also add soy sauce. Sounds weird but they did this on a cooking course I went on and it was delicious

just use tomato puree with a splash of soy. passato will be too 'wet' unless you thicken it as above.
I make mini pizzas, bread rolls cut in half and toasted. fried onion, mushrooms, garlic, sweetcorn and bacon bits mixed with tomato puree spread on the toasted rolls and topped with grated cheese then grilled. mmmm nice

I would use the passata but add a capful of balsamic and some salt, pepper and dried oregano. Reduce it down in a pan to thicken. Add a blob of tomato puree if you want it thicker.

I do it this way every week and love it.

I use an onion, a bit of garlic, two 400ml cartons of passata, oregano and a teaspoon of sugar. Simmer for half an hour or so and blitz. Makes quite a lot.

I've also used the Napoli pizza sauce and a cheapo Aldi pasta sauce in the past. Both were fine.

I just rub half a clove of garlic over the base and then spread thinly with Tom purée and sprinkle with seasoning and herbs but I'm not a fan of very 'saucy', ie in my mind soggy, pizza.... Plus I'm a lazy bastard! 😂😂
