Let's talk about cake

Not pies or tarts, only cakes.

I've given this a lot if thought and have decided the best cake is coffee and walnut without walnuts and with an enormous amount of buttercream icing.

I've just had some Victoria sponge and it was better than nothing but no icing.

Just popping back to the thread... I was hoping it might have spawned a glossy cookbook in my absence, something I could drool over.

Bramble88 · 25/01/2019 17:01

Lemon drizzle cake hands down with a nice cup of tea! 😁

feltcarrot · 25/01/2019 17:02

Pear and almond cake never lasts long in this house.

@HelenaJustina, cooking in the oven will work just fine it's just that I try to save time and cut corners wherever I can. And it will be spot on as a pudding with custard, good call!

TeacupDrama · 25/01/2019 17:19

Dafs what is tipsy cake? Can you describe it?

Fay have you got a pic of a strawberry gateau, i feel so cakeless today that I'll settle for a pic.

Lemon drizzle with lots of lemon juice.
Cherry and almond.

VeryFoolishFay · 26/01/2019 09:27

The nearest I can get is a raspberry and mascarpone thing with a chocolate crust but it does stray into dessert territory.

Chocolate and cherry cakes looks awesome.

didireallysaythat · 26/01/2019 10:42

I have never quite understood the excitement about lemon drizzle cake... Tell me it's just because I've never had a good one? The ones I've made have just been, well, boring....

onalongsabbatical · 26/01/2019 10:43

N'owt wrong wi' cake straying into dessert territory. Looks fab VeryFoolishFay

VeryFoolishFay · 26/01/2019 11:19

didireallysaythat A good lemon drizzle cake can be splendid.

I think its best not long after baking because you get a slightly crunchy outside, with a soft fluffy citrus scented sponge, and then the sharp/sweet sugary lemon crust with the syrup drizzling through.

Too much sponge. not enough drizzle = very boring indeed.

Its the perfect combination of tart and sweet which is the key.

formerbabe · 26/01/2019 11:20

The secret to lemon drizzle cake is to use way more lemons than you think you should use.

DuggeesWoggle · 26/01/2019 11:28

Discovered this thread this morning while feeling absolutely wiped out with first trimester tiredness and nausea. These cakes all sound fabulous and I think we all wish we lived near VeryFoolishFay's tea rooms!

I make banana cake very regularly as we usually have some bananas on the go. Mary Berry's all in one banana loaf recipe. Sometimes I throw in some chocolate chunks if I have them.

I remember having a bloody amazing golden syrup cake, possibly from a BBC good food recipe. It was in squares and sticky and delicious. Would be lush warm covered in custard (as is most 'plain' un-iced cake) but that might be straying into dessert territory which is possibly not allowed here.

MIL prides herself on her cakes - brags she doesn't weigh anything and says how popular they are and don't hang around. Sorry mil but your cakes are horrible and dry and tasteless - never buttercream but occasionally some jam smeared in the middle. A travesty of cake. There. I said it.

BestIsWest · 26/01/2019 11:29

Coffee and walnut is my favourite.
Closely followed by carrot.

pineapplebryanbrown · 26/01/2019 11:39

Going to my favourite tea room soon, really hope they don't just have polenta cake and Victoria sponge. That'll ruin my day.

I like it when they have a cherry and almond thing that's got elements of goo in it.

Who'd have thunk we could spend 9 pages talking about cake?

This thread has reminded me how much i love coffee cake. I haven't had it for ages and now I need some!

That carrot wedding cake is simply amazing.

I also love the sound of the orange cake. I've just read the thread from the beginning and hoped the op would post the recipe, so delighted you have!

pineapplebryanbrown · 26/01/2019 11:41

My banana loafs are always too wet and gloopy.

OP posts:
pineapplebryanbrown · 26/01/2019 11:43

Fred pretty sure my orange cake recipe is slightly wrong. Substitute the plain chocolate for Dairy milk and some caster sugar with the orange juice.

Fay how much caster sugar?

OP posts:
DuggeesWoggle · 26/01/2019 11:48

This is an awesome chocolate orange cake and doesn't sound a million miles from your mum's cake thigh

My DC always vote for marble madness cake. Its cooked in a bundt pan so its easy to cut and you get more caramelised edges. Its one part vanilla sponge, one part chocolate sponge with chocolate chips, swirled together.

I love honey, almond and apple cake, its just one layer and you get a crispy top

DH loves any cake but not too much cream or icing. He finds it distracts from the cake itself.

VeryFoolishFay · 26/01/2019 12:42

I'm baking for the tea room this morning - elderflower and lemon cake plus a Victoria sandwich.

The cake is popular there because its all homemade plus the owner insists on only 8 slices from a large 4 egg sponge for only £1.50. She gets a lot of repeat business!

I use Felicity Cloake's lemon drizzle; there's some interesting variations here....
