Not pies or tarts, only cakes.

I've given this a lot if thought and have decided the best cake is coffee and walnut without walnuts and with an enormous amount of buttercream icing.

I've just had some Victoria sponge and it was better than nothing but no icing.

Not a fan of excessive buttercream, I do love a V sponge though.

I do like a polenta cake for that extra bit of texture, and a fruit element like orange syrup or actual softened fruit.

Forgot to say the Lidl cake only cost £1.79 and they had Red Velvet and possibly others in the same range. Not tried those.

Chocolate cake, especially a Black Forest type cake with cream and cherries. But it has to be chocolatey - I hate it when I go out for cake (which is only occasionally) and choose a chocolate cake that looks amazing and then it just tastes bleh and hardly tastes of chocolate at all Angry. I’d rather have a smaller but properly chocolate-dense piece of cake than a massive dry tasteless piece.

Agree that Vienna is cake heaven that all cake-lovers must visit. I went with exP once when he was going to a conference and I had nothing to do but wander around looking at shops and museums and stopping for coffee and cake. BLISS.

There is simply nothing like the perfection of a Victoria sponge cake. Fresh cream, strawberry jam, dusted with caster sugar on top.
Mary Berry's sponge recipe is the best.

Chocolate Guinness 2nd.
Coffee and walnut 3rd.
Fact.

Forgot to say, cooking time for Apple cake much nearer to 55 mins, rather than the 40 they suggest.

Ooh, I’ve made this before, it’s a nigella recipe and is delicious!

I made them into cupcakes with mascarpone icing.

Not a cold and foxes - a perfectly made black forest gateaux (sp) for me would probably top the lot, and bang would go the diet. And yes a simple fresh Victoria sponge on a summers day perfect. To me the time of year seems to make a difference.

My son requested blueberry and raspberry cake. I made a sponge and threw in frozen berries. Lemon curd filling and buttercream icing. Amazing!

The trouble I have with cakes is I've no one much to share with so rarely make a cake or I end up eating it all. Expect I could freeze the sponge bit and do half and filling for second part another time? Also I discovered a while back with the buttercream filling to add a little double cream. I don't suppose that's a new idea but I don't watch cookery shows much now or got books. I also like mascarpone (sp)

Buttercream freezes fine in a cake. I always add a bit of double cream too. You could always cut the whole thing into portions and freeze them individually.

Engaged if it's a recipe that calls for 2 tins, halve the recipe, then cook in one tin. Cut in half to make 2 semicircles, and ice the half cake.

I have been known to freeze slices of cake, then warm in the microwave, let all the icing ooze out, and serve with ice cream....

Chocolate, ginger and caramelised pear cake

I think that would be improved by not being chocolate, just a plain sponge with crystallised ginger in the batter. Should this be iced though?

Orange Drizzle Cake

6 oz luxury margarine
6 oz caster sugar
3 eggs
6 oz self raising flour
2 tablespoons cold milk
2 oranges - finely grated rind

Orange Syrup
Juice of 2 oranges

Chocolate Topping
4 oz plain black chocolate
1 oz butter

Grease 2 lb loaf tin and line with greaseproof paper
.Cream the luxury margarine with sugar until soft. Beat in eggs, one at a time.
Fold in sifted SR flour slowly and add cold milk with last table spoon of flour. Add
finely grated rind of oranges. Turn mixture into grease proofed tin. Bake in a moderate oven

for 1 hour or until well risen and golden brown. Turn the cooked cake out onto a wire rack
and allow to col. When it is nearly cool, make slits across the top of the cake with sharp
kn ife and then “drizzle” the prepared orange syrup across the top so that it soaks into the
cake. Spread the chocolate across the top of the cake in whorls
Cuts into 8 or 10 slices.

That's mum's cake but I'm not sure that recipe is quite right, I'll check her cook book next time I'm over there. I thought there was sugar added to the orange juice and that the chocolate was milk rather than dark.

Coffee and walnut Battenberg with appropriately made and flavoured marzipan is an outstanding cake.

But, I adore fruit cake.

I’m a total cake whore and there’s very little I don’t like. Coffee and walnut is definitely up there but my favourite has got to be Madeira birthday cake with fondant icing (yes I know that’s slightly weird.
