So what's the best carrot cake recipe?

Inspired by the best chocolate cake recipe in AIBU...

what are your foolproof, best ever carrot cake recipes please?! I've promised by boy I'll make him one tomorrow.

I've tried lots of different ones over the years and they're all good, but not amazing.

Rachel Allen's recipe.

I swear by it – utter heaven, especially when you make two and wap one on top of the other with the icing in the middle

I use this one with golden syrup - and fill with buttercream flavoured with orange zest. Lovely!
