Mushroom and brandy sauce.

Can anyone please recommend a rich, tasty and (quite possibly) calory-laden sauce to go with steak or chicken ? Or perhaps with pasta ?
I've found a few on Google but a personal recommendation would be better if possible. Thankyou.

Red wine better than brandy I discovered the other day when I had no wine so slugged brandy in. Very bitter.
Chuck some sliced mushrooms onto butter, sweat them and then make a roux by adding flour. Ignore the gloopy golfball effect. Add the liquid bit by bit till you get the desired consistency. I use a mixture of cream, stock and red wine. Bit of thyme salt and pepper.

Fry mushrooms quickly so they start to brown, lower heat a bit, add crushed garlic (lots!) cook 1 minute.
Pour in brandy and set alight watch your eyebrows!
Add double or soured cream. Season to taste, chopped fresh parley to serve.
Serve with your chicken or steak or alternatively as a starter dish.
Setting alight stops the bitterness.
