What would you make with broccoli, cauliflower & chicken thighs?

I've been given a load of broccoli, cauliflower & chicken thighs. Tonnes of it!

What can I make to make a meal from it? Any ideas?

I do like a nice bit of cauliflower soup, or cheese or chunky sliced covered in chilli and roasted.

Broccoli and cauliflower cheese. Some sort of spicy baked chicken thighs or use them in curry or something?

I would do mash spuds, veg and chicken thighs with gravy.

Use any leftover chicken in a soup.

Strip the thighs and make a curry with the veg in.

Giant yorkshire pudding filled with chicken, veg, gravy.

Apparently you can roast cauliflower and broccoli so I might try that.

Stir fry with some noodles and spices.

Anything really, you basically have meat and 2 pretty versatile veg. You could do literally anything. A pasta might be nice too.

It depends on your skills and store cupboard ingredients really.

Roast cauliflower is sensational. We had it last night with chicken curry. My mouth is watering just typing this Blush

Isn’t it lovely? I was really surprised by the taste - I just put on a tiny bit of olive oil, some chilli and lemon hour and roasted it until it was all golden and yummy.

Roast them all with a Chinese sauce is delicious. I'd cook it all and freeze for a quick tea and add rice if you wanted.
