Similar to what you've already done, but i make wraps with grated cheese, grated carrot, grated cucumber, and a sprinkle of raisins.

I've just discovered grilled artichoke hearts (from a jar, I'm not that energetic), sliced in a wrap with other stuff. Very nice. Might work in a sandwich too...

I love artichoke hearts. Pretty much my favourite addition to a standard pizza.

You could probably grate courgette as well.

Roasted pepper. Not grated and only works if you're going to eat straight away.

OOOH wraps with peanut butter, grated carrot and cucumber and a drizzle of sweet chilli. Yum. Even better with a sprinkle of spring onion and some coriander...

I once worked with a woman whose standard lunch was a sandwich she made with sliced white bread and TINNED carrots.

I don't recommend it, it looked, and smelled, gross.

Ps grated beetroot is lovely but messy.

Tuna, mayo, olives, grated veg. Lush.

Pitta with houmous and grated cheese/carrot and tomatoes.

Avocado! Not grated obvs, but just sliced with some cheese, chilli, rocket etc.

And try grated raw beetroot. There's a hfw salad recipe with grated beetroot, toasted cumin and walnuts and orange juice which would be lovely in a sarnie with feta or another crumbly cheese like wensleydale.

I tried a peanut butter and banana sandwich today. I like peanut butter. I like banana. I did NOT like the sandwich. Weirdly claggy.
