Please could you give me some post op food advice!

My 74yr old dad is having a triple heart bypass soon, he has changed his lifestyle a lot since discovering he had heart disease. When I bring him home from hospital I want to make sure he's eating really lovely healthy foods to aid his recovery. Sadly my mum passed 2 years ago so we're on our own.

I think soups will be a good idea but my repertoire is limited to lentil & red pepper!

He likes simple foods and he's leaning more towards vegetarian choices. Can anyone give me and ideas of things I can cook for him that are simple yet tasty? Thank you

Good food website has a lovely recipe for spiced carrot and lentil soup. Probably similar to your current one but it is tasty!

Sweet potato and red pepper soup
Poached eggs on seeded toast (yum!)
Pesto/veggies with whole meal pasta
Salmon/tuna with new potatoes and salad/veg
Oatmeal for breakfast? Could do overnight oats and serve with fruit
