What sauce with filled pasta?

Have just discovered filled pasta for a really quick midweek meal (can't believe I didn't think of it before!) but not sure what sauce to have with it. We've had beurre noisette and sage, and just olive oil, parmesan and black pepper. Any other quick and easy ideas?

We normally have it with pesto or a tomato-based sauce.

I make a sauce with a little garlic, chopped tomato, any other veg I want to put in (pepper, broccoli, cauliflower, carrot etc) chopped up small and cook with a decent amount of olive oil. Just cook until the veg is starting to soften. My dc love it with filled pasta.

Tin of tomatoes, a bulb of chopped garlic, few mixed hebs and a sprinkle of sugar. Mm yum.

I normally mix it with a tray of roasted vegetables, crumbled up feta cheese, drizzle of olive oil and lemon juice and maybe a sprinkle of sunflower seeds.

Pesto
Passata seasoned with garlic, Worcestershire sauce and black pepper
Depending on the filling, a cheese sauce made by stirring creme fraiche with grated cheese

I like it in stock with pesto and grated courgette to make a soup.

unlimiteddilutingjuice · 06/01/2019 19:24

Butter and Parmesan.

DeRigueurMortis · 06/01/2019 20:36

As pp's I like it best just with olive oil, black pepper and parmesan generally but I did it once as above with a small amount of chicken stock (the fresh stuff you can get in tubs) and that was lovely too - especially mopping up the juices with some crusty bread.

Impicciona · 06/01/2019 20:38

Stock, tomato sauce or butter and sage would be the most traditional.
