If I ordered something from Amazon and it wasn't in stock so is coming at a later date, and the price has now increased, do I still only pay the price it was when I ordered it?

If you’ve already ordered them yes. At least that is what’s happened to me. They don’t take money until it’s dispatched so if the price drops you can cancel and reorder!

I ordered something in December that was delayed dispatch (so before money had actually been taken) and it was the price of ordered at.

Amazon do a price promise that goods will never be more expensive than at the time of checkout...but if they reduce in price before shipping they'll always charge you the cheaper price.

Customer service is one of their strong points...if only paying tax was!
