Who is veggie/vegan and uses a slow cooker?

In theory I'm a fan of my slow cooker and have made bean chilli and braised red cabbage this week (separately).

I can't see the point in slow-cooked dal as it's so fast to make on the hob.

Rice goes strange for me.

And I've run out of inspiration, of late.

Please tell me your ideas,

I usually use the slow cooker when I'm doing all the home stuff, school runs etc so and can add water or turn it down if needed. On days I work I'm out of the house for ages and have never been brave enough to leave it on all day.

How, exactly, do I use it as a route to domestic deification?

I make risotto in the slow cooker, soups like lentil and chunky veg, chilli and I found a great sag aloo slow cooker recipe that is delicious. I can't find it now but you can google it. I find you can't leave veggie or vegan food in for longer than about 4 hours or the veg goes to mush and the flavour can get a bit bitter. No overnight cooking.

I think really long slow cooking is only for tough bits of meat that turn out edible after that treatment! Totally agree that most veg can't take it, even on low. Do you manage to make risotto that is not mush and would you mind sharing the recipe,please?

I don't really have a recipe for risotto just chuck the rice in with some stock and stir after about an hour. Add more stock and keep an eye on it stirring occasionally. Should take about 2 hours on high. Add fried mushrooms at the mid point and any other veg at the beginning

I use mine for soups stews chilli Dahl, bolognaise - all stuff that I can chuck in and leave whilst I do other things

I hadn't thought of doing a risotto in a slow cooker, that's a good idea. I use mine for veggie stew or soups mainly, but I'm keen to try out some more stuff.

I will have another go at risotto when working at home this week so I can keep an eye on it. The mushy result last time was offputting.
