Quinoa recipes, please!

I bought a bag of quinoa but have no idea what to do with it! Please share any of your best quinoa recipes!

Do a tray of roasted vegetables, corguette,aubergine , fennel ,peppers, red onion, cook quinoa in chicken stock then add roasted vegetables ,stir through add fresh herbs and lemon juice , serve with salmon , chicken or whatever you want

Lovely, just what I was looking for! I normally do the same recipe with rice or couscous so that will make a nice change.

Similar to above but i add feta/haloumi and olives and sometimes chilli flakes.

I can't find the exact recipe I used originally (and now I just make it up) but was something like this one - veggie chilli with quinoa www.twopeasandtheirpod.com/vegetarian-quinoa-chili/.

Fry onions. Boil quinoa with yellow lentils, and any veg you like, finely chopped. Add stock and the onions.
