Please can you help me with a 1 day low carb vegan menu?

I'm going to try one vegan day a week, maybe increasing to 2. I eat a meat heavy diet, and lots of cheese as I do a low carb diet generally. This means no pasta, rice, potato, grains or sugar. I'm totally open to beans, lentils, veg etc.

Who'd like to suggest a day's menu for me- 1200 calories (approx), 2 or 3 meals, no fruit, low carb, ideal for a newbie vegan.

I read this back and realise maybe I am asking for the moon on a stick, but figured if anyone could help me, it's mumsnetters.

No breakfast.

Big salad for lunch with a good mix of nuts and seeds added.

Some kind of vegetable curry or lentil stew for dinner. Roasted aubergine on the side.

I routinely low carb but I’m not vegan so I just eat what I like.

I usually do extra virgin olive oil, lemon, black pepper and salt but sometimes I’ll do a proper vinaigrette. Or mustard/honey etc (but that obviously wouldn’t work if you’re going to be Uber strictly vegan on that day).

I’d go for things like avocados and olives in salads with an oily dressing to up the fat content. Plus toasted nuts.

You could do cauliflower pizza base and top with lots of veg.

Soups are good too made with whatever veg you like.

Tofu is low carb but things like beans and lentils aren’t.

I'm also a meat and dairy eater but do vegan meals every now and again. Some of these will be calorie dense, so small portions.

Breakfast
Soy Yoghurt with seeds.
Low sugar baked beans on veggie frittata.
Avocado with anything.
Green smoothie with vegan milk / Yoghurt.

Lunch
Whatever salad / veg you like with lemon and herbs a bit of oil dressing. Add any beans you like and or nuts and seeds.
Veg soup with beans.

Dinner
Veg or tofu or whatever in satay sauce (Peanut butter, coconut milk, soy sauce, chopped onion and chilli). This is sooooo delicious but +++calories
Dahl. Lentils with coconut milk or chopped tomatoes, spices and veg.
Bean Chilli.

Ooooo also hummus is low carbon and vegan. Can dip veg sticks.

You don’t need a huge amount of beans/legumes, though. If you’re sensible it’s easy enough to make it low carb.

I do the blood sugar diet so small amounts of beans, lentils, chickpeas etc are allowed!

Any recommendations for milk? I love my coffee but in my experience the dairy free mills are pretty naff especially if you're not used to them. Maybe I'll have to go vegan and coffee free 1 day a week? May be a bridge too far....

Tbh I find that I prefer my coffee black if I can’t have full fat milk or cream in it.

Green lentils are really good to sub for mince, so you can do stuff like lentil bol and courgetti or cottage pie with broccoli. Cheap, healthy and satisfying.

If you’ve not tried roasted brocolli and cauliflower you’re in for a treat! Goes really well with a curry (or would be lovely with a Dahl). And even better, it actually turns out better if you use frozen florets.

I love roasted cauli but I usually use a yogurt and tandoori marinade on it. Perhaps coconut cream would work? And that's a good tip about the green lentils, I could sub lentils for mince. We eat a lot of mince, so it would definitely save time to use the same veg in two dishes

I'm sure you could do something similar to what you have but vegan friendly. Again I usually just use olive oil and lemon plus some garam masala and whatever else I fancy. Yum.

I’m vegan. Low carb and vegan would be hard...I think one of the great things about being properly vegan is that you don’t need to do low carb!

Can you eat sweet potatoes? Sweet potatoes with lentils or Christmas chickpeas, veg and spices is nice. Taifun smoked tofu with almonds and sesame seeds is so nice I eat it just as it is. Sojade natural soya yoghurt has 0 carbs, and so does unsweetened soya milk.
