Easy to make healthy lunch/snack ideas

I'm looking for healthy lunch and snack ideas. I am the pickiest person ever with food and don't like a lot of stuff that's good for you. I don't like nuts, soup or most salad things. I'll eat lettuce, cucumber and carrots so don't know what else I could have to make a salad. I've tried googling it but all I can find is fancy stuff I don't like ☹️

I’m going for a few Ryvita and a couple of other things in a lunch box when I go back, to stop me spending a fortune on awful packaged sandwiches. Maybe some cream cheese and a few tomatoes. Not massively healthy, but better than either nothing or loads of crap (my usual alternatives).

You could do the salad as you suggest, but you could also make a pasta salad. Mix it all together when cold with mayo and maybe some chicken or bacon/prawns maybe?

Don’t know if you like peppers, mushrooms, peas or sweet corn, but if you do, they could be dumped in pasta salad too. Alternatively you can boil some rice with a few stock cubes. Gently fry onions, mushrooms and peppers with some chilli powder. Once the rice is cooked mix it together and voila! Savoury rice. I’m sure there’s loads of variations of a theme you could do - risotto maybe?

What about frittata, it's mainly eggs & potatoes plus any left over vegetables you want to use up. You can eat it hot to cold.

Try cucumber thinly sliced and mixed with plain yoghurt for a summer salad, add a little chopped fresh mint if you feel adventurous.
Grated carrot with a simple dressing is good too, maybe honey & balsamic vinegar, or a little whole grain mustard.

You might like rice salad, or pasta salad, or even cous-cous!

You would probably like Caesar Salad, it's mainly lettuce, but you can add sliced cooked chicken to make it into more of a meal.

How about cookedveg used cold in salads etc? Butternut squash, sweet potato etc, how about pulses?
