What can I do with over cooked gammon?

Over cooked the fucking thing on Christmas Day. It’s now glaring at me from the fridge. I need to do something with it today.
Cut up small in a pie? Or is that just going to wreck the whole pie?

Chicken and ham pie with loads of sauce / gravy in it to stop it being dry.

Spanish style ham fritters.

Pie will be fine - make a fairly wet sauce (maybe a white sauce and add some leek) and it will get juicier as it sits in the sauce and reheats.

Turkey, gammon and breadsauce pie.
Cut turkey and gammon up littlepieces, bung in pie case, sprinkle with thyme, make up packet bread sauce, pour in, pie crust on top. Bake in oven. Nom nom, Tis lush.
