I have a Silverside of beef, weighing 2.96kg, would like it more on the rare side then medium. How long to cook for? 15 mins per 500g?? Help....starting to panic as on the label says 45mins per 500g but google saysc15 - 20 mins. Confused.....thanks, this is for xmas day btw

Depends if you sizzle before hand. (Realy high heat for 20 mins at first before you turn it down)

Google river cottage meat and follow Hugh, that’s what we do.
Enjoy, we’re having rib, can’t wait

Definitely not 45 mins per 500g. 15 mins per 500g sounds about right.

Thus is how I did mine earljer and its lovely.......Roast for 20 minutes at 220C/fan 200C/gas 7, then turn the oven down to 160C/fan 140C/gas 3. Cook for 20 minutes per 450g for medium/15 minutes per 450g for rare. Rest the meat for 15-30 minutes in a warm place.
