Parsnips and carrots help please?

I'm sure I saw something on telly about par boiling parsnips and carrots then tossing in oil and leaving overnight?

Can I do this? Will they go minging? Can I use good fat or should I use oil? Help please! I want to be doing as little as possible tomorrow!

I usually just bung them all in the oven, and hope for the best, as only 2 of the 10 of us actually like them! I'd not par boil and leave overnight or they tend to go funny.

I don't know about oil but I peel mine the night before and leave them in a bowl of water in the utility. Not quite what you asked but might help and it doesn't affect them.

Thanks everyone! Luxury have you par boiled them? I think it was Jamie Oliver i saw. I assumed they'd go brown!

They will be fine. I'm doing my potatoes now, all ready for tomorrow.

Have you got any maple syrup? You can mix that with the oil and roast in the oven.

I peeled, chopped then boiling water for a few minutes. Into cold water to cool. When cold put into a bag and drizzle oil in. Put in fridge ready for cooking tomorrow. They'll taste great. I'm a pretty good cook!

It's what I've done they'll be fine. Put the oil on now and keep them cool.

Thanks all! My plan is:

Par boil for 8 mins
Chuck into cold water
Bag with oil and seasoning
Fridge over night

Sound ok?

My sprouts are in cold water now ready to fry with pancetta. Do I oil and bag those too??

My sprouts are just trimmed and in cold water overnight. I'll cook them tomorrow as it only takes a few minutes.
