I've got a switch with the standard controller included.

How many people can play Mario Kart at once?

I have 4 kids.

If I buy 2 of the wired controllers Can all 4 play at once? ( 2 on included controllers, 2 on wired?)

4 players can play on one switch locally; although I've only done it with wireless controllers.

For online play, it's 2 local I think.

Four players can go at once around one screen.

You have a choice of controllers - the Switch comes with two "joy-con" (don't blame me for the name!) controllers clipped on, and that'll cover two players. You can either buy a couple of full size controllers for players three and four, or another pair of joy-cons.

Anchor's right - if the kids want to play over the internet, the max local players is two. You can have all four kids playing each other no problem, but if they want to play against others over the internet only two can play at once on your Switch.

I meant them all in the same room against each other?

We have a Switch, Mario Kart, the included joycon you can separate and use as two controllers for some games, two wired controllers and 4 boys.

They all play Mario Kart together (as a four player game rather than taking turns).

The thing you have to watch out for with some games is the joycon can't be used as two controllers. This is for most games with wider angle camera rotations (so you need both joysticks) and games which need more buttons to do more things in the game. These are games like Zelda, Splatoon2, Mario plus Rabids Kingdom Battle, any Lego game etc. Most shops will be able to tell you if a game you are interested in buying will need the full joycon or if you can use it as two controllers.

But you can definitely split it with Mario Kart.

(We ask at Game for advice, they are very good with the Switch. And we can buy things for it from anywhere afterwards, not necessarily from Game itself, so if it's cheaper on the internet we already know it should do what we want.)

Yes - like I said, "Four players can go at once around one screen."

It's fine. Just get another pair of joycons or two controllers like you posted, job's done.
