I'm having friends over for dinner on Saturday night..just her and her dp and me and dh. I've absolutely no idea what to cook for us though! Any inspiration from you lovely mumsnetters? I'm going shopping on Saturday morning so can pick up ingredients.
Was thinking something Christmassy but not Turkey or fish.
Thank you!!!

I am cooking for guests in Saturday. We are having the Hairy Dieters Spanish Chicken Traybake. It is very easy and delicious mopped up with crusty bread. Not Christmassy but we love it and it is cheap to make. You would get the recipe online.

Steak, chips and pepper sauce.

Chestnut or spicy parsnip soup
Warm salad of sweet potato and turkey or chicken with mango chilli dressing
Limoncello mousse

Something that you can have prepared before they come so you aren't in the kitchen all evening. I'm a terrible cook though so can't just suggest what that should be beyond lasagne lol

Loving the steak and chips idea but I cannot for the life of me cook steak properly.. honestly it's wasted on me. Definitely loving the idea of something I can just bung in the oven for a few hours...I'm a lazy cook!!

Chicken tray bakes are brilliant
Also stew with Boulangere potatoes
Or slow cooked pork belly with mash and green beans
Anything you can chuck in and basically leave while you host!
For pudding, stollen is Christmassy - I’d look a couple of decent cheeses, some stollen and some port.
If you are doing a starter my advice is cheat! Waitrose do lovely dressed mini crabs, or get some cooked prawns and serve with baby gem lettuce and rocket with a nice dressing.

Get chicken breasts (1 each)paint with mustard of your choice (I like wholegrain!) place in big oven tray.
Scatter sliced onions and baby potatoes around chicken.

Drizzle small amount of oil and season. Put in oven gas 5 for 30 minutes.

Take out from oven and put green beans or asparagus and a couple of sliced pears (weird but works).
Back In oven for 15.

Minimal effort always good!
