Vegetarian ready meals to feed a crowd

Suggestions for vegetarian meals I can just shove in the oven to serve a crowd - well, 8 people. Have family coming to stay the weekend including one vegetarian and would like to do a meal one night I can just crack out and put in the oven. So along the lines of vegetarian lasagne or moussaka or something similar? Any suggestions?

I saw M & S did a veg lasagne but it was a very dear £27 for one that only serves 6 (!!). Would also like to avoid Cook though I know they have lots of veg options, just don’t want to spend quite that much. Just normal supermarket type stuff that will serve like 6 (but I can afford two of not at £27 a pop!).

can you make a chickpea and sweet potato curry ? Many recipes online and you can knock it up in about 15 minutes and pop in the oven or slow cooker

Quiche, green salad, potato wedges/oven chips/jackets or potato salad

M&S do the big round pasta dishes which probably serve 3 or 4 people if you did sides? I'm sure there's a couple of veg options.

Of could you get some pizzas?

I would make a massive macaroni cheese and serve it with different types of sausages, crusty bread and some vegetables.

what crap would that be?

A lot of Quorn is loaded with salt and artificial flavourings. It's also laboratory made. Tofu can also be marinaded in things like monosodium glutamate.
Pure tofu is obviously not a problem but you still need to check it. Tival Sausages are packed with garlic powder and tons of other crap.

For 8 people I'd cook 4 large pizzas, a salad, garlic bread and serve a dessert of ice cream.

semi-ready meal that will do this nicely is to buy the fresh pre-stuffed cannelloni tubes that waitrose do. buy 4 packets, a pack of frozen roast Mediterranean vegetables, a jar of pasta sauce and a large mozzarella cheese. thaw out the veg. arrange the cannelloni in a large greased dish and top with the veg and sauce then mozzarella.

much more convincing than a microwave meal but barely any more effort.

Thinking about it, Costco do pretty good ready meals for feeding a crowd.

No crap in that offering at all Hmm

Forget the ready meals. Make a massive pasta bake or two. Use ready made sauce, add easy no-prep ingredients like peas, spinach, other frozen veg, use mountains of cheese as everyone loves gooey, cheesy goodness. Serve with warm crusty bread and salad leaves. Is that easy enough OP? I get not wanting to cook this weekend! Wink
