What would you cook?

MIL and FIL are coming to lunch on Saturday as they off on holiday for Christmas and we want to see them beforehand. However I don’t know what to cook I want something light as they have plans in the evening but also want it to wow them. I’m off work Thursday & Friday so could prep.

I’m thinking maybe chicken liver pate but what else to make it a meal? I’m a decent cook & no real things to avoid although DFIL is diabetic and DMIL doesn’t like aniseed flavours.

What would you cook main and a dessert?

as the weathers cold a decent home made vegetable soup with some nice crusty bread and butter or a jacket potato with cheese and beans or coleslaw on top

Soufflé of some sort? I'm vegetarian so I'd do a cheese-based one. But I think you can do them with meat/fish if you wanted. They're light and actually not that difficult to make, but people are always hugely impressed by them!
