Stuffing help

Can anyone link me to or tell me a good stuffing recipe to go with Turkey for Christmas day?

I'm so bored of my usual one.

Granny's Irish stuffing. Really easy, potato based and infinitely variable.
Boil and mash 1lb or so of potatoes (more if your turkey is large).
Meanwhile chop a couple of medium onions and fry in butter until soft but not brown.
Mix them together, add salt, pepper (no milk or cream - unnecessary) but plenty of fresh herbs. Thyme and parsley are my favourite.
You could also add chopped bacon pieces (fried with the onion) or the turkey liver, and/or chopped celery, garlic, etc etc.) The stuffing absorbs the juices from the turkey as it cooks, it's not as dense as some other mixtures and comes out beautifully moist.
