So I have chucked some bits in the trolley and need some inspiration for about 5 easy and healthy ish dinners. I have a slow cooker plus regular oven etc and a reasonable store cupboard with flour, herbs, baked beans.

So, can anyone come up with some meals from the ingredients I have?

Chicken thigh fillets
Big mince
6 eggs

Cheddar
Parmesan
Milk
Greek Yogurt

Pasta
Baked potatoes
Could cous
Pitta bread
Wraps

Peppers
Carrots
Onions
Spring onions
Green beans
Cucumber
Frozen peas
Tinned tomatos

Any ideas would be fab! Thank you!

Use the mince and onions to make meatballs. Add oregano etc. Use the tinned toms for the sauce. Serve with pasta and parmesan. Freezes well if you use all the mince.

Make a big chicken casserole out of the thighs. Dust with seasoned flour, fryin oil. Remove from pan. Chop up a load of the veg, saute for 5 mins. Remove veg. De glaze pan with a pint of chicken stock. Put veg and chicken back in pan. Add a handful lentils, if you have them. Add garlic, salt pepper, herbs. Oven for 1 hour. Put potatoes in at the same time to make jackets to serve with the casserole, or you could serve with the pita or the cous cous. I'd serve this with the peas.

You could do a tortilla out of the eggs. Or cheese and spring onion omelets, serve with beans. Or a cake if you have sugar, flour, butter.

Thanks halfwit, I think I was asking a bit much as lack of replies would suggest! Recipes sound fab, sounds like an easy way to do chicken. Thank you!
