Kimchi anyone?

Does anyone like it and if so do you make it or buy it or eat it out? I’ve always wanted to try it as I love things like sauerkraut so I bought a jar of it in Sainsburys. I really like it but at £2.50 for a small jar I wondered whether there’s cheaper around that’s still nice or if anyone has a simple recipe. There’s so many recipes online I don’t know which to try.

@granny - lol it’s so tempting to eat before, but 1 mth is the time it needs to ferment. Cabbage or mango can take even longer to ferment.

I use a plastic takeaway container! But I make it without any fish or fish sauce as am vegetarian. I think the fish definitely contributes to the pungency, cos I don't notice it making the rest of the fridge smell.

I also chop it into 1 - 2 inch pieces (mak kimchi) like this recipe www.maangchi.com/recipe/easy-kimchi

I can make some with one small head of Chinese leaf/napa cabbage and apart from waiting for it at the salting stage it's pretty quick.
