In laws and Christmas

Just a bit of background....
we haven’t spend xmas day with my in laws since 2014 and during this time I’ve had a child who is now 2. So I felt guilty and invited them for Christmas this year. They come as a package as my sister in law and her children live up north and return to the south for Christmas staying with her parents so we will have a total of 8 for dinner. The thing is now I’m getting stressed about the meal as I have to cater for the following...
2 children our nieces (6 and 10) who eat halal meat only
Mother in law doesn’t eat poultry
Sister in law vegetarian
Father in law who wants choice of 2 meats...
I wish I’d never bothered now and I’ve already told my husband it’ll be the 3 of us only from now on.
Can anyone suggest a menu and how to keep everyone happy please? My husband is saying just do turkey and salmon....

When I have veggie friends over for a roast I just do more meat free side dishes.

If your sil is vegetarian then your nieces would probably be ok with vegetarian food? And fish too, if they like it so your husbands idea sounds fine.

Do you all eat meat?
How about doing a gammon on Christmas Eve- leftovers can be FIL other meat.
Do halal lamb for Christmas Day main with a veggie thing eg nut roast for SIL.
