Your favourite fish dinner party recipes, please!

We don't cook a lot of fish, although love a good fish pie. We have pescatarian friends coming for dinner on Saturday and would love to do something impressive but relatively budget friendly!

We are pretty confident cooks, I think we'll do a gruyere and asparagus souffle to start. Still pondering a pud...that's the bit I like cooking best.

Side of salmon marinaded in garlic, lemon, turmeric, olive oil and black pepper - Sabrina Ghayour’s Persiana recipe

Or fry a chopped fennel bulb with some garlic until soft, add a splash of wine, a tin or two of chick peas and a bottle of passata, salt, sugar and pepper to taste, plus any herbs you fancy. Simmer until the oil rises and add enough thick white fish to feed everyone. In the oven for 15 - 20 minutes til done.

Or chop enough potatoes to feed four into large cubes, don’t bother peeling, add olive oil, oregano, salt and pepper and roast for about an hour in a medium oven. Add a sliced ring of chorizo and a couple of handfuls of small tomatoes, back in the oven on high for twenty minutes, lay thick white fish on top, olive oil, seasoning and back in the oven for about 15 minutes.

Ah. Pescaterian. Ignore the chorizo, add pointy peppers, dried chilli flakes and more seasoning instead. Can swap the potatoes for squash as well.

Probably best not to use Chorizo for the pescatarians! Grin

Salmon en croute - one of my favourites, I don’t have a recipe to hand but I’m sure you can find one online. A luxury fish pie including prawns and scallops would go down very well with pescatarian DH too.

Rock turbot is relatively inexpensive and very delicious.

It’s really nice with a red pepper sauce and sauté potatoes.
