What side dish would you serve with chicken tarragon ?

Firstly, I admit I didn't make it myself. I was lucky enough to find it in the reduced section in Waitrose. But I can't think of a suitable accompaniment. I'd be grateful for any suggestions.

I do a tarragon chicken recipe with hasselback potatoes and grilled asparagus. It gets a lot of compliments for not much work!

Thankyou everyone. I seem to remember my Mum doing green beans with CT. At a French restaurant I went to a few times decades ago, thin French fries was the norm. I'm not sure about that now.

Agree with green beans/leeks and rice/mash but would also suggest mushrooms as a great accompaniment. Maybe sautéed with a little garlic and lemon juice added at the end, or with chopped shallots and a splash of sherry.

I always keep a microwave golden rice in the cupboard for such occasions, mixed with peas from the freezer. It's surprising how many dishes that goes with.

Dauphinoise potatoes. Probably ready made like Sainsburys or Marks.

Thankyou all. I'm sure I'll be able to come up with something from your ideas. I've just bought some Uncle Ben's golden vegetable rice this morning but I'm having that tomorrow with chicken Kiev. Home- made pizza tonight. Isn't it a privilege to eat well ?

Parnentier potatoes, fourquenelle. I make them with olive oil, butter, smoked paprika and, sometimes, cubed pancetta or bacon lardons.

Lyonnaise potatoes are so quick and easy. Slice some par boiled potatoes, add some thinly sliced onion and sauté in butter.
