Do you have a foolproof red velvet cake recipe?

I need to make a red velvet birthday cake. The last one I made was a hideous disaster that I'm trying to erase from memory.

Please can someone point me in the direction of an easy but delicious recipe? Needs to feed eight people. Thank you Thanks

The hummingbird recipe has worked perfectly for me every time. You might be able to google it, if not I will post a pic in the
Morning when can get the recipe book. Is downstairs, and beyond me to go down and find it now!!!

This one is AMAZING. It's American (but so is red velvet) and so you will need to convert from cups to grams. Takes a few minutes if you google a converter.

I've made it a few times and it's really delicious.

@Artesia I did google the Hummingbird one because I'm clearly too tight to buy the book and I could only find cupcake recipes.

IME all red velvet cake is disgusting. It takes so much colouring to get the red that all you can taste is the bitterness from the colouring.

Ive never had a good one, even in the US. I've tried lots because DS1 thinks its cool so orders it when we are in the states (although almost without exception he then admits it wasn't as nice as he was hoping).

I just use the cupcake recipe and double it up to make a large cake. I’ve never had the nasty food colouring taste if I use good gel colouring rather than the regular stuff (unlike rainbow cake, which had such a nasty chemical colouring taste it was almost inedible).

Do watch out though - my son had a slice in a cafe the other day. I freaked out 24 hours later when he went for a poo and it was bright red. Thought he had some hideous internal bleeding. Then I remembered the cake!

If you use wilton gel food colouring it doesnt take that much to make it red and it doesn't taste bitter.
