What are you having for dinner?

I'm in such a rut if cooking the old same things. Have a 2.5 year and a 11 week old so not loads of time to spend cooking these days but I do enjoy it. We've been living off slow cooker dinners as to can get them prepped while the children nap (ha!) or just having boring old bolognese, curry etc.

Been lazy today and didn't prep dinner this morning. Have just got some chicken breast mini fillets out of the freezer so will do something with those. Probably a curry of some sort. Got rice and poppadoms in so should be ok.

So, what are you having? Inspire me please so I can add some new things to my shop next week!

Halloumi pan fry. Fry veg in pan, add halloumi, done. Nicer than my description sounds.

Lamb shank in red wine that's been in a low oven all afternoon with mash, peas and roast carrots. It was lovely 😊

Not particularly hungry but dh will be when he gets back so just bungled in jacket potatoes and will have with cheese and beans.

We've got meatballs, roast peppers & red onions, with sweet potato fries and HM spicy tomato sauce.

Tomorrow is manic so will be pizza.

Fish pie with veggies tonight and Nigella's super easy and tasty lamb ragu tomorrow (the one with mint, not lardons).
I try to bulk cook so some can be frozen and then there's a slow rise of homemade meals on hand when we're exhausted.

Some fab suggestions thanks! Definitely going to be googling some recipes. Really love the look of hassleback potatoes I've never had them before will have to give them a go!

This is a new one for us. We had it for the 2nd time tonight. DS LOVES it, and ate it at more than a snail's pace, so that's a winner for me.

I popped in sweet potato and parsnips too. Tonight I used tinned tomatoes instead of 'real' ones an it was just as nice but a bit more mushy.
