She's been a big help to me on a long running work project.

She is married, early 30s, pregnant, already has one child

Gift vouchers to a restaurant in her city/UberEats credit
Google to find a salon/spa in her city that does gift vouchers
Alternatively, you could make a little gift basket of postable British treats - M&S biscuits and tea etc

Hmm, I'm not sure a dinner date or spa session is very feasible for a working mother of two? And I don't know where in her large city she even lives, let alone reputable places.

I like the treat idea, but would need to find small/lightweight things to make it viable to send.
