How early can I prep fruit?

Clementines, bananas, apples.

Aim to eat at 4pm, guests arriving at 2pm how early can I get then ready?

I'd do bananas and apples last minute because they'll go brown otherwise.

If you're doing a fruit salad with a syrup I'd say late morning, but if you're doing a platter then immediately before eating as banana & apple will discolour quickly.

What prepping do they need?

If you're cutting apples, if they are in lemon juice, they shouldn't discolour.
