Just back from a wee break in Krakow (whole other story). They serve this grated carrot/apple dish and it is the BEST thing I've ever tasted! It's like coleslaw but finer and less crunchy, kinda soggy but not soggy.

I asked the waiter for the recipe and he said 'it has mayonnaise ' That's not good enough 😢

Sounds delicious! A quick Google provided this .. but it doesn't have mayonnaise 🤔 still may be worth a try!

Its actually called Russian salad however modified slightly in Poland. Different region will have different bits , but boiled carrots, peas ( get CNN from polish shop if you have any ) parsnip,, gherkin , boiled eggs , mayo mustard etc

there are many ways we make carrot salad in Poland, my kids love one where i finely grate carrots and apple half and half of each, just mix it up, kids love it as side dish

some people add less apple and a 1/4 tsp of hoeseradish

others add a bit of oil instead

Also look at Polish section in supermarket for mayo from company called Winiary (there's only one kind I came across here, in England), it tastes different from how mayo is made for British taste buds
