Birthday cake baking in progress. Have made a strawberry flavoured sponge and it is a little sweeter than a regular cake. Need opinions for the best icing please. Butter cream? Cream cheese frosting? Other ideas welcome.

Yes the tang of cream cheese would be lovely with a sweet strawberry cake. Or otherwise if you’re eating it straight away a fresh cream filling/covering to cut through the sweetness. Butter icing or ganache etc will just be too much.

Thanks. Do you have a good cream cheese recipe? I haven’t done one before

If you Google the recipe for Nigellas Guinness cake, she makes a lovely cream cheese frosting. The directons are all in with the cake recipe.

I just make a regular butter icing, make sure it’s totally smooth, then beat the cheese in as an extra really quickly. If you over mix it the cream cheese goes runny so don’t put it in at the start.

I think a cream cheese icing would be a bit sickly and claggy personally, I would do a really tangy lemon glace icing and fresh strawberries on top.
