..if a recipe says “drained stem ginger” it means the kind in syrup, doesn’t it?

Yes. That thread must have taken a bit of a tangent, I only read the first few posts early on. Am a bit Confused as to where stem ginger comes into it!

Yes, but then add some of the ginger syrup warmed up and drizzled over the ginger cake and ice cream (or the scantily glad young man obvs)

It does, but don't drain the syrup down the sink! Put a bit in the cake and drizzle some over the cake when it's still warm.

I was imagining inventing a cocktail with the syrup actually....

I've never made a ginger cake before. I think we all ought to make one today and post pictures.

You're missing out Nigel, stem ginger in syrup is great, can be used in so many things and keeps for ages once opened.

Ginger jam is also rather good, especially on hot cross buns.
