Really good chicken soup recipe

I’ve got last night’s roast chicken simmering away for stock. Anyone got a really good chicken soup recipe?

This one from BBC good food never fails me. And it’s so quick and easy. I once omitted the noodles and put pearl barley in and it was maybe even better! Word of advice if you do use noodles - cut them into 1cm size pieces otherwise eating it gets messy!

The best soup I’ve made required an entire chicken! But chicken soup is a simple dish. I use carrots in chincks, onions, finely chopped parsley and celery.

The nicest addition is dumplings I think - I make them out of matzo meal which is basically ground up crackers, then mixed with eggs, the chicken fat and some goose fat and seasoning and refrigerated before rolling into balls and poaching in the soup.

Ooh the chicken noodle one is looking good.

Thought about matzo balls ... but I’ve never eaten them so I don’t know what they are supposed to be like...

I made a lovely butternut squash and chicken soup the other day. Boiled the squash in the chicken stock with garlic and black pepper. Blend then add chicken pieces. It was amazing!

I’d never eaten them before I tried cooking them very recently. They are lovely! Floaters for me but you can also make more sense sinkers apparently.
