Dairy Free Lemon Drizzle Tray Bake recipe please!

I have to make one for next weekend. I have looked at recipes and they all have olive oil. I have bought a dairy free spread. Also the normal recipe I use has milk in it. Can I use water instead of milk?

I would use oat milk , soya milk if I had it to hand

I think a dairy free spread will likely be softer than butter anyway, so you will probably get away without the milk. I agree I'd use oat milk if you have it (but it should only need a few tablespoons, so I think water would be okay). What recipe are you planning to use? I would go for nigella's lemon syrup loaf cake and just sub out the butter for dairy free spread, and milk for oat milk or water.

I use Mary Berry traybake recipe. It has 3 tablespoons of milk I think....

Just use oaty milk and dairy free spread. No one will be able to tell the difference.

3 tbsp of milk will be fine replaced with water IMO if you don't keep a dairy replacement in..I don't and I wouldn't be buying one for the sake of 3tbsp

Don't use soya milk, the proteins are very similar to dairy and people can react to both. I don't put any milk in it, so it should be fine. You probably need to practice quite a few times though to really perfect the technique Wink.

Oaty milk is definitely the best replacement. It even makes good Yorkshire pudding (barista is best). I think I my make lemon drizzle cake on Monday.

I do a basic Bero 2 2 1 sponge replacing butter/spread with dairy free version then lemon juice/ sugar drizzle for top. Always goes down well.
